Audra finds a tasty and easy St. Patrick’s Day muddy buddies on Pinterest using Rice Chex cereal and Lucky Charms marshmallows! No matter your genetic lineage, it’s an excuse to eat and drink green things and be silly. We could all use more of that. And who doesn’t love an opportunity to eat lucky charm marshmallows!? Make it for your family, your child’s classroom or for your coworkers. Here’s what you need for one batch. (One 12 oz box of Rice Chex can make two batches)
4 1/2 cups RICE CHEX® CEREAL
1/2 cup WHITE CHOCOLATE CHIPS
1/3 cup PEANUT BUTTER
2 TABLESPOONS BUTTER
1/3 cup POWDERED SUGAR
1/4 CUP green M&MS (you can keep the yellow ones too)
1/4 cup LUCKY CHARMS MARSHMALLOWS (or more if you really love them!)
Set cereal aside. In a small microwavable bowl, microwave chocolate chips, peanut butter and butter uncovered on High for one minute and then stir until melted and smooth. Pour mixture over cereal and stir until evenly coated. Let cool on baking sheet. Divide the cereal mixture into halves and place in food storage bag. Add powdered sugar to one half. Add drops of green food coloring to the other half. Shake the bags until well coated then add to a large serving bowl. Toss with the marshmallows and M&M’s. Add green sparling sugar if you have it!
